My Favorite Roasted Butternut Squash

Fall is a time for everything orange and beautiful.  I actually never used to like fall.  Back in South Carolina, fall meant leaves everywhere and endless rain that made said leaves stink.  It wasn’t until college that I realized that I’m addicted to sweaters and everything that comes with them.  I even made apple and cheddar scones this morning, but I’ll get to those later.

Toss a bunch of chopped up butternut squash in some olive oil, season generously with salt and pepper, and bake on a foil-lined pan for about half an hour at 350 degrees, until they start to brown slightly and you can easily pierce them with a fork.

Eat, swoon, repeat.
