Apple Turkey Burgers with Smoked Mozzarella

I think this dish takes the cake for the prettiest photo result.  It’s actually fairly healthy if you don’t get too crazy with the cheese!

I first started eating turkey burgers in college.  I decided to try them when, after cooking them several times for my job at the school cafeteria, I decided they were safe.  The grill didn’t always have them, so I made sure I ordered them regularly whenever they did.  I would get mine piled with veggies and eat it on toasted bread, if whoever was cooking was kind enough to do so.  Turkey burgers were also a great alternative to the tuna melts and mozzarella sticks I’d come to love as I gained my freshman um…25.  Oops.

Chop up a small apple and half of an onion into small pieces.  You want them to be big enough that you can taste them, but small enough that they don’t cause your patties to fall apart.

Cook them with a little nutmeg until slightly softened.

Mix the apples and onions into the ground turkey (I used ground breast meat) and season liberally with salt and pepper.  Don’t skimp!

 was able to form five small patties from my pound of ground turkey.

Then just cook them up in a hot skillet until the internal temperature reaches 165 degrees.

Finally, add a couple slices of smoked mozzarella, pile on the arugula, and drizzle with some balsamic vinegar.
