Remember when I said I love potatoes in the morning more than any other time of day? This is the reason why. These potatoes are bursting with flavor and spice and I love, love, LOVE them. They’re also really easy to put together and they’ll make your home smell like a diner in the best way possible.
I realized tonight looking through the photos on my camera that I’m five or six posts behind, so get ready for some super food-porn!
For a hefty portion for one person, or a taste-size portion for two people, wash and peel one large russet potato. Cut it into bite-sized chunks as evenly as you can. Throw these into a pot of salted water and bring to a boil. Allow them to cook until you can just pierce them with a fork. You don’t want to cook them more than that or they’ll get mushy during the finale.
Drain and toss in your spice mix. I’m using a combination of spices that I’ve really been enjoying for other dishes, such as the Cajun Chicken Pasta and Baked Bloomin’ Onion. You’ll need smoked paprika (if you can’t find smoked, regular old paprika will do), cayenne, garlic and onion powder, salt, and black pepper. My mix is heavy on the paprika and black pepper.
I really should stop saying yum on here but…um, yum?!
Get a cast iron skillet piping hot and drizzle with a little bit of oil. Cook the potatoes until they start to get all colored and pretty and your kitchen gets that diner smell going on, about ten minutes. Add more drizzles of oil if your pan starts getting too dry.
Serve with scrambled eggs and a drizzle of ketchup over the whole thing.
